The Easiest Taco Soup Recipe
Makes 16- 1 cup servings (1 WW Freestyle point)
Ingredients:
Olive Oil Spray1 lb. Extra Lean (95%) Ground Beef
1 Ranch Dip Mix Packet
1 Taco Seasoning Packet
1 Can Black Beans, drained and rinsed
1 Can Pinto Beans, drained and rinsed
1 Can Corn, drained and rinsed
4 Cups Chicken Broth
Topping Options:
Fritos
Plain Non-fat Greek Yogurt
Shredded 2% Cheddar Cheese
Directions:
1.Spray a non-stick skillet with olive oil spray.
2. Brown the ground beef over medium-high heat.
3. Drain the fat off the beef, if necessary, and add the beef back to the pan.
4. Add both seasoning packets and mix together.
5. Add all beans, the corn, and the chicken broth.
6. Bring to a boil and then lower to simmer for about 30 minutes
This soup comes to 1 WW Freestyle point per cup!
We like to add a little cheese, Fritos, and greek yogurt, but you can totally eat it without those extra toppings. Those extra toppings except the yogurt do add points, but that crunch of the Fritos is worth it to me. Plus you are only using 1-2 points for the actual soup, so even with Fritos you are looking at a low point dinner.

I tried the recipe and it was delicious! I threw in some diced tomatoes and kidney beans as well because I had them on hand. In your recipe, you list 1 can of black beans twice...did you mean to put 1 can pinto beans? I only ask because it looks there are pinto beans in the photo. Thanks!
ReplyDeletetotally meant to put 1 can of pinto beans. Changing that now Thanks for the heads up and glad you liked the recipe!
