The Best Potato Skins Ever

I do not name these potato skins "the best" lightly. I've accidentally done years and years of research on potato skins and many times I've even made them myself. Even though making these little guys is rather simple, there are a few ways you can go wrong in the process.

Have you ever bit into a potato skin and the first thing you taste is the bland skin? And it's only after a few chews that you finally get some flavor in your mouth? I've experienced it a lot. Nobody wants to eat the skin unless it's perfectly crispy and salty. This is the first thing most important thing that gets your potato skins on the road to being the best.

Since your tongue is what is actually tasting your food, we need to make sure that the layers are perfectly seasoned from bottom to top. This bring us to the next layer- the potato that is still attached to the skin. A lot of times this part is way too thick and since it's still attached, you can't season it all the way through. The solution? Make this area thinner.

Here are the skins looking like little boats. I used a knife to carve out the potato, but you could probably achieve the same results with a spoon. If you use a knife, be careful, pay attention, and cut slowly.

The Best Potato Skins Ever

prep time: 15 minscook time: 45 minstotal time: 60 mins

ingredients


  • 4 Medium Potatoes
  • 1 Tbs. I Can't Believe It's Not Butter Light Spread
  • 1/4 cup plus 2 Tbs. Shredded Reduced Fat Cheddar Cheese
  • 4 Slices Uncured Bacon, cooked and diced
  • Splash of Almond Milk
  • 1/2 tsp. Paprika
  • Salt and Pepper
  • Olive Oil Cooking Spray

instructions


  1. 1. Preheat the oven to 425.
  2. 2. Cut each potato into four sections.
  3. 3. Scoop out the inside section of each piece so there is only about 1/2 inch of potato left on the skin. Save the scraps.
  4. 4. Spray the potatoes with olive oil spray and sprinkle salt, pepper, and paprika on the top and bottom.
  5. 5. Place the potatoes on a baking sheet and in the oven for 30 minutes.
  6. 6. Place the potato scraps into salted water and bring to a boil for 8-10 minutes, or until fork tender.
  7. 7. Drain potatoes and add 1/4 cup cheese, splash of milk, bacon and season with salt to taste.
  8. 8. Mash the potatoes and other ingredients together.
  9. 9. Spread the mixture onto the inside of the potato skins.
  10. 10. Sprinkle remaining cheese on top of the skins.
  11. 11. Place the skins back in the oven for 10 minutes, and then turn on the broiler for an additional 5 minutes.

Halloween Candy Corn White Hot Chocolate

Excuse me, how is it already October?! I'm not even remotely mad about it. It has been a brutally hot summer so we, like the rest of the world probably, are ready for it not to be 90 degrees anymore. We got a little tease of cooler temps a few weeks ago and we were inspired to create this recipe. It's based on a Christmas Pink White Hot Chocolate recipe that we made last year.

We both love candy corn and I know not everyone does, but I feel like even non-candy corn lovers would like this drink.

Full disclosure: this is a splurge recipe. We made a lot of alterations to our original white hot chocolate recipe to make it less points. Nonetheless, even with the adjustments this is probably more points than you want to spend on a drink on any ole' day. Each 8 oz serving is 7 points. It's crazy that that's the reduced points version. I can't even imagine what our original recipe is. Eek!

    Candy Corn Hot Chocolate Recipe
    Makes 5- 8 oz. servings (7 WW Freestyle points)

    Ingredients:
    - 32 oz  unsweetened plain almond milk
    - 1 tsp vanilla extract
    - 38 pieces candy corn
    - 8 T non-fat Reddi Whip
    - 4 T sugar free vanilla creamer
    - 8 pieces of Lindt Bite Sized White Chocolate

    Directions:
    1. Add all of the ingredients, except the whipped cream together, and heat over medium-high heat until everything is melted.
    2. Add the the Reddi Whip once everything is melted and combined. It is not a topping but is to be melted in with the rest of the liquid. You can add more whipped cream as a topping. (You can have up to 8 tablespoons and it's zero points.)

    10 Low Point Weight Watchers Freestyle Snacks

    When you first start the Weight Watchers program, one of your first thoughts might be "how do I snack?" I know it was one of my first thoughts- I love snacking! If it's your first time keeping track of what foods you are eating, you may be surprised to see that some of the things you may consider "healthy" are higher in points. This was a hard transition for us. We love peanut butter, but it's no longer something I use in a snack due to how many points it has- it's more of a treat these days.

    The truth is- it gets easier and if you make sure you are prepared, you can still enjoy snacks. We keep our fridge + pantry stocked with these snacks. It's so important to keep low point snacks on hand, because non-low point snacking can put you into a point predicament.

    1. Bean and Corn Salad / 0 points- I (Casey) eat this snack almost every day. It has saved me on so many occasions. When you are hungry but don't have any points left, this recipe is here for you. The best part is that it's filling. Check out the recipe here.

    2. Babybel Light Cheese/ 1 point each

    3. Dill Pickles / 0 points

    4. Any Fruit / 0 points- Our staple fruits are apple, bananas, and strawberries. Every now and then we will get a pineapple or use frozen mango or blueberries for overnight oats.

    5. Premiere Protein Shake / 2 points each- These come in a lot of flavors and my favorite is vanilla. We just discovered the Muscle Milk 100 calorie Non-Dairy Vanilla Creme Shakes and they are actually only 1 point and tastes really similar to the Premiere Protein ones! But we will buy whichever one is available at the store when we are there.

    6. Boiled Eggs / 0 points

    7. Pretzels / Rold Gold regular twists are 3 points for 18 pretzels. When you need something crunchy + salty this is great to have.

    8. Air-popped Popcorn / 1 point per cup- This is Savannah's favorite snack and I always end up eating some of hers. While this isn't the most filling snack sometimes you just need popcorn. The easiest way to make it is to use an air-pop machine because you don't have to use an oil at all. You can just top the popcorn with salt.

    9. Greek Yogurt / 0 points- Mix this with a little vanilla, no calorie sweetener (I prefer Truvia), and fresh fruit. There's also something called Agave Five which is only 5 calories and 0 points if you only use a tsp.
